Almond + Coconut Butter
*Slaps hand against forehead* D’oh! I realised, after all this time, that my hand held blender has a super high speed setting. I’ve endured lumpy smoothies and soups (albeit, very delicious) this whole time, without there being a need to. Ah! Oh well. To celebrate this discovery, I knew immediately what I had to make. Almond butter; but not just any almond butter!
Almond & Coconut Butter (vegan, raw, gluten, soy & sugar free)
1 x cup raw almonds
1/2 cup organic dried coconut shreds
Let me first say that I have attempted to make almond butter in my blender many times, often being patient enough to stand there for 30 minutes (!!!) waiting for some type of solidification; just willing the almonds to release their beautiful health oils and start amalgamating into buttery goodness. But no.
Until, that is, I found the turbo button! And away it went! Swirling around the blender with oily enthusiasm. *Yes*, I squealed, bouncing around my kitchen, finally. It took all but 10 minutes, 2 ingredients and a liiiiiittle scraping (before the mixture becomes liquid you will have to stop the blender and scrap the sides a few times), and this was born…
Check out how oily and delicious it looks; just like in the shops!
You could use toasted almonds if you so choose, and you can absolutely omit the coconut.

November 15, 2011Ah YUM!! I am saving for a food processor so I can make pounds and pounds of my own flavored nut butters haha. I am not the most patient person so I have given up making it in the blender. This combo is genius, and I bet it tastes amazing!
I am grateful for store bought almond butter! (Not so grateful for the price however!!)
